Vanilla Panacotta

INGREDIENTS

– 10g of gelatin
– 30g of cold water
– 250g of cream
– 250g of milk
– 105g sugar
– ½ Vanilla bean, split and scraped

INSTRUCTIONS

Step 1: Soak the gelatin in water.
Step 2: Gently heat the cream and milk with the sugar, seeds and vanilla bean, stirring until the sugar is dissolved.
Step 3: Remove from heat and add gelatin and stir with a whisk until completely dissolved. Strain through a sieve.
Step 4: Spread the mixture, let it cool and let it set in the fridge for at least 6 hours.
