Make an aromatic broth with :
– 2 Chicken Leg Piece
– 1 Liter of water
– 1 Poultry stock cube
– 4 Sprigs of thyme
– 4 Sprigs of parsley
– 1 Onion
– 1 Carrot
– 2 Cloves of garlic
– 2 Bay leaves
– 4 Cloves
Bring everything to a boil then plunge the chicken legs for 30mns to reserve
Barbecue sauce – 1 chopped onion – 1 diced carrot – ½ stalk celery
– 1 Apple cut into small pieces
– 200 g of chicken stock
– 100g of apple vinegar
– 30g of ketchup
– 50g of honey
– 1 Bay leaf
Step 1 – Sweat onion, carrot, celery and apple in a little oil, caramelize slightly
Step 2 – Deglaze with the apple vinegar and reduce
Step 3 – Add chicken stock and bay leaf and reduce
Step 4 – Add the ketchup and honey and prolong the cooking
Step 5 – When the sauce is consistent, mix and strain
Step 6 – Adjust the seasoning
Cooking on the barbecue
Step 7 – Light your barbecue
Step 8 – Place your chicken legs on the grill
