Broccoli Soup

INGREDIENTS

– 1L Chicken stock
– 400g of broccoli cut into small florets

– 1 Onion, chopped
– 30g of cream
– 10g of butter

INSTRUCTIONS

Step 1 – Put the broth, broccoli and onion in a saucepan and bring to a boil for about 15 minutes;
Step 2 – Add the butter and blend until the soup is smooth;
Step 3 – Add the cream and adjust the seasoning.

Chef’s tip: Add a touch of curry powder to give the soup more character. Zucchini can also be added to the soup.
