Cardamom and Vanilla Fritters

INGREDIENTS

– 100g sugar
– 5g of cardamom mold
– 225g all purpose flour
– 65g almond powder
– 10g Baking powder
– 2,5 g Salt
– 2 Eggs
– 160g sugar
– 5g vanilla extract
– 60g fruit compote
– 150g curdled milk
– Vegetable oil, for frying

INSTRUCTIONS

Step 1:- In a bowl, mix flour, almond powder, baking powder and salt.
Step 2:- In another bowl, beat eggs, sugar and vanilla until mixture triples in volume and forms a ribbon when beaten, about 5 minutes.
Step 3:- Add the compote and incorporate the dry ingredients, alternating with the curd.
Step 4:- Let the dough rest for 15 minutes.
Step 5:- Preheat oil in deep fryer to 180°C and line a baking sheet with two layers of paper towels.
Step 6:- Drop balls of dough into hot oil one at a time and cook for 3 minutes or until golden brown, turning halfway through cooking.   Step 7:- Drain on paper towels. Let cool for 1 minute, then coat with sugar and cardamom mixture.
