Squid and Potato Salad

INGREDIENTS

–  450 g potatoes, peeled and cut into quarters
–  340 g of squid
–  3 cloves of garlic, chopped
–  60g of olive oil
–  1 onion, chopped
–  ½ bulb of fennel, chopped
–  10g of capers
–  45g of lemon juice
–  45g of chopped flat parsley

INSTRUCTIONS

Step 1 – Place the potatoes in a saucepan. Cover with cold water. Season with salt. Bring to a boil and simmer for 15 minutes or until tender. Drain. Rinse under cold water and let cool.
Step 2 – Cook squid with garlic in 30g of oil until hot inside and starting to brown, about 5 minutes. Season with salt and pepper. Remove from heat and let cool in the pan.
Step 3 – Cut squid into slices, place squid and cooking oil in a large bowl. Add potatoes and remaining ingredients and mix gently. Adjust the seasoning.
