French Beef Tartar

INGREDIENTS

– 600g of very fresh beef round
– 30g of Lemon juice
– 30g of Dijon mustard
– 15g Old fashioned mustard
– 15g Worcestershire sauce
– 1 Egg yolk
– 15g of Chopped capers
– 60g of Olive oil
– 30g of Chopped flat parsley
– 45g of Chopped chives
– 45g of Finely chopped onion

INSTRUCTIONS

Preparation:
Step 1:- Mix the lemon juice, mustards, egg yolk, capers and add the oil while whisking continuously. Adjust seasoning as needed.
Step 2:- Using a knife, finely chop the meat.
Step 3:- Add the dressing to the ground meat with the herbs, Worcestershire and shallot
Step 4:- Adjust the seasoning and serve chilled.
