Beef Stew with Carrots

INGREDIENTS

– 80g onion
– 20g concentrated tomato
– Thyme
– 200g beef stock
– 2 cloves garlic
– 4 carrots
– 700g beef (chuck and bourguinon)
– Laurel
– 15g butter 

 

INSTRUCTIONS

Step 1: Cut the meat into pieces and brown it in a hot and oiled pan.
Step 2: Add the onions as soon as the meat is browned and add the broth.
Step 3: Add the tomato paste, the chopped carrots, the garlic and the herbs.
Step 4: Adjust the seasoning and simmer for 2 hours over low heat.
Step 5: Add 15g of butter to fix the taste before serving and mix well.

The chef´s special touch:
Serve with a good homemade purée.
