One Pot Rice with Chicken, Pepper and Zucchini

INGREDIENTS

– 450g of chicken
– 45g of olive oil
– 80g diced zucchini
– 1 red bell pepper cut in strips
– 10g of sweet paprika
– 300g of rice
– 750g vegetable stock
– 125g dry white wine
– 35g grated parmesan cheese

INSTRUCTIONS

Step 1:-  Cook chicken in oil until it starts to brown.
Step 2:-  Add the vegetables and continue cooking for 3 minutes, stirring;
Step 3:-  Add paprika and rice.
Step 4:-  Pour in broth and wine
Step 5:-  Bring to a boil
Step 6:-  Cover and simmer over low heat for 18 minutes
Step 7:-  Remove from heat and stir in Parmesan cheese
