Portuguese Chicken Wings Recipe

INGREDIENTS

– 12 Whole chicken wings
– 2,5g of salt
– 1g Ground pepper
– 15g olive oil
– 1 French shallot, chopped
– 40g Unsalted butter
– 30g Hot peri-peri sauce
– 15g Sweet paprika
– 30g Red wine vinegar

INSTRUCTIONS

Step 1 – Brush the chicken with olive oil, season with salt and pepper and bake for about 30 minutes at 16°c. Turn the wings over 10 minutes before the end of the cooking time so that they are well browned.
Step 2 – Tenderize the shallot in the butter, add the peri-peri sauce and the paprika.
Step 3 – Continue cooking for 1 minute while stirring and add the vinegar.
Step 4 – Simmer for 2 minutes, stirring, or until sauce thickens.
Step 5 – Coat chicken with sauce and serve hot.
