Red Thai Chicken Curry

INGREDIENTS

– 4 pieces of chicken (preferably breast)
– 1 onion
– 150g coconut milk
– 50g red curry paste
– 15g coriander
– 20g olive oil
– 10g sesame oil
– 10g lemon juice
– Salt
– Pepper

 

INSTRUCTIONS

Step 1: Cut the chicken into pieces, mix it with the lemon juice, sesame oil, salt, and pepper and let it marinate for 1hr30min.
Step 2: Chop the onion and mix with the marinade.
Step 3: Brown the chicken, add the red curry paste and add the coconut milk.
Step 4:  Let cook for 10 minutes and sprinkle with coriander before serving.

The chef’s special touch:

Serve with Pad Thai or rice. It can also be interesting to add peanuts to the simmering mixture.
