Coconut Macatias

INGREDIENTS

For the coconut preparation:

– 100g coconut powder

– 1 teaspoon of vanilla extract

– 80g sugar

– 50g water

For the dough:

– 500g flour

– 10g baking powder,

– 100g soft butter

– 4 eggs

– 40g of sugar,

– Water if needed

– 1 pinch of salt

– 1 teaspoon of vanilla

INSTRUCTIONS

For the coconut preparation:

– In a saucepan, put the coconut, sugar, vanilla extract and water.

-Mix and let the preparation on low heat while stirring.

-Set aside

For the dough:

– Dilute the yeast in a little warm water (reserve)

– Mix flour, sugar, salt, eggs, vanilla and yeast

-Knead until you get a homogeneous dough for about 10 minutes.

– Add the butter and knead for another 5 minutes

– let the dough rest in a cool place for 1 hour, covering it with a clean damp cloth

-Cut the dough into small pieces of 60g

– Flatten each piece and place a spoonful of coconut in the center

– Fold the edges towards the middle to close and turn over to form a firm ball

– Place the balls on a baking sheet covered with baking paper, leaving enough space

– let the balls rise until they have doubled in size

– brown the macatias with egg or a mixture of milk and sugar and place in a preheated oven at 200°C for 10-20 minutes until they are golden brown
