Milk Rice Pudding

INGREDIENTS

– 200g of good quality round rice
– 1,5L of whole milk
– 100g of sugar
– 4 egg yolks
– 100g of butter
– 1 vanilla pod

INSTRUCTIONS

Step 1: Fill a pan with cold water, pour in the rice and bring to a boil.
Step 2: After boiling, drain the rice immediately to stop the cooking.
Step 3: Return the rice to the pot. Add the milk, sugar, and vanilla bean and cook for 45 to 50 minutes, stirring to prevent the rice from sticking. (Normally, after 50 minutes, the rice has absorbed most of the milk)
Step 4: Take the pan off the heat and let it swell for 5-6 minutes.
Step 5: Add the butter and continue stirring to prevent a film from forming.
Step 7: At this stage, you can add candied fruits, chocolate, or other ingredients as you like.
Step 8: Add the egg yolks to the warm but not hot mixture so that the eggs do not coagulate.
Step 9: Remove the vanilla pod and filter before putting it in the fridge to prevent the butter from risig to the surface.
