Orange Pancake

INGREDIENTS

– Pancake batter
– 1 liter of warm milk
– 120g of sugar
– 70g of melted butter
– 1 pinch of salt
– Vanilla
– 120g sifted flour
– 120g cornstarch
– 6 eggs
– Orange caramel
– 2 oranges
– 80g of sugar
– 1 teaspoon of vinegar

INSTRUCTIONS

PREPARATION OF THE CREPE DOUGH
Step 1:- Melt the butter in a bain-marie and set aside
Step 2:- In a bowl break the eggs and whisk well with the sugar and salt
Step 3:- Pour in the sifted flour and cornstarch and mix with a whisk while remaining in the center, do not try to take all the flour.
Step 4:- Gradually add the milk
Step 5:- Mix well to eliminate lumps, otherwise pass through a sieve
Step 6:- Add the cold melted butter and mix.
Step 7:- Add vanilla, rum etc.
Step 8:- Let rest 1 hour
Step 9:- Mix the pancake mixture again before cooking


PREPARATION OF THE CARAMEL
Step 10:- Pour the sugar and vinegar into a saucepan and heat over medium heat until golden brown.
Step 11:- When the color is golden, pour the orange juice and bring to a boil for 5 minutes


MAKING THE CREPES
Step 12:- Place a ladleful of batter on the crepe pan or in a buttered pan (cover the entire surface well).
Step 13:- When the edges come off, turn the crepe over
Step 14:- Cook the crepes for a few more seconds and dip them in the orange caramel
