INGREDIENTS

– 8 spoon cookies or boudoir cookies
– For the cream
– 250g of mascarpone
– 250g of cottage cheese
– 3 egg yolks
– 3 egg whites
– Bitter cocoa powder
– 100g of sugar

For the syrup
– 100g sugar
– 240g of strong coffee

INSTRUCTIONS

PREPARATION OF THE SYRUP
Step 1:- Mix the coffee with the sugar and bring to a boil (reserve)

Step 2:- Whip the egg whites, gradually adding 100g of sugar to obtain a firm meringue.

Step 4:- Gently add the meringue
Step 5:- Add an alcohol of your choice (optional)

ASSEMBLE
Step 6:- Soak the cookies in coffee syrup and place them in a dish.

Step 9:- Finish with a layer of cream
Step 10:- Put the preparation in the fridge for 2 to 3 hours
