Grilled Lobster with Coriander Butter

INGREDIENTS

– 2 lobsters 

– 1 lemon

– 15g coriander 

– 100g butter 

– 1 carrot 

– 1 leek 

– 1 courgette 

– 5g olive oil 

INSTRUCTIONS

Step 1: Preheat the oven to 170°c.

Step 2: Finely chop the leek and grate the carrot and courgette lengthways, fry in a mixture of butter and olive oil, adjust the seasoning and set aside.

Step 3: Finely chop the coriander, crush the butter with it and melt it slightly.

Step 4: Place the lobsters in the oven and coat them evenly with the butter (Cook for about 6 minutes).

Step 5: Serve the grilled lobster with the julienne of vegetables.

Fry with pastis to give more flavor to the cooked lobsters.
