SHRIMP TEMPURA

INGREDIENTS

– 20 large raw shrimps or other base (squid, fish, vegetables)
– 40 grams of flour
– 30 grams of cornstarch
– 2 Eggs
– 5 cl of ice cold sparkling water
– 1 pinch of salt
– 5 grams of baking powder
– 150g of breadcrumbs (optional)
– 1 lt of frying oil

INSTRUCTIONS

Step 1:- Peel the shrimps, keeping the tail, and add salt and pepper.
Step 2:- In a bowl beat the eggs and add the corn flour, flour, a pinch of salt, baking powder and soda water, stir well with a whisk, (the dough should be fluid and should not have lumps, if not pass your dough in a sieve)
Step 3:- Heat the oil to 180 degrees, and pass the shrimps in the paste by the tail, then coat them with breadcrumbs if you wish and plunge them in the frying oil and cook until they are well gilded (approximately 2 to 3 minutes)
