Sweet and Sour Ginger Fish

INGREDIENTS

– 700g whole fish or 2 fillets 
– 1 carrot 
– 30g cucumber
– 1 green bell pepper
– 1 red bell pepper
– 30g ginger
– 10cl of water
– 12cl of white vinegar
–  Sugar
– 1 cornstarch or cassava powder
–  Tomato paste
–  Plum sauce
– 1 onion
– 3 cloves of chopped garlic
– 3 coriander
– 3 stalks of onion tails, chopped diagonally
– Chinese vermicelli
– Pepper
– Salt
– Sesame oil
– Oil

 

INSTRUCTIONS

Step 1: Seasoned the fish or filet with salt and pepper.
Step 2: In a bowl prepare a mixture of water, vinegar, tomato concentrate, sugar, plum sauce, cornstarch, a pinch of salt, and set aside.
Step 3: Fry the fish and put it in a dish.
Step 4: In a wok, pour a net of sesame oil and make sweat the onion, the garlic, cook 2 mins. Add the ginger, mix well and add all the vegetables. Afterward, add the mixture and thicken the sauce.
Step 5: Pour the sauce generously on the fish and decorate with fried vermicelli, coriander, and onion tails.
