Step 1: Preheat the oven to 200°c.
Step 2: Rub the leg of lamb with the sprigs of thyme, prick the garlic cloves and place the bay leaves.
Step 3: Place the peeled and washed potatoes around the leg of lamb, sprinkle with olive oil and adjust the seasoning.
Step 4: Cook for 45 mins at 180°c and add a knob of butter 10 mins from the end on the bay leaves.
Step 5: Let the meat rest for 20 minutes before eating it.
