INGREDIENTS

– 450g of penne
– 1 Chopped onion
– 30g of olive oil
– 2 Cloves of garlic, chopped
– 2g of finely chopped chilli
– 2 Tomatoes, diced
– 120g Tomato puree
– 75g of vodka
– 150g cooking cream
– 35g of pecorino (parmesan)
– 4 basil leaves

INSTRUCTIONS

Step 1:- Cook the pasta al dente and keep 100g of the cooking water;
Step 2:- In a large frying pan over medium heat, sweat the onions and add the garlic and chilli.
Step 3:- Add tomatoes and tomato paste. Continue cooking until the liquid from the tomatoes has evaporated and stir in the vodka.
Step 4:- Add cooking water, cream and Parmesan cheese. Stir well to make a smooth sauce.
Step 5:- Season with salt and pepper. Add the pasta, coat with the sauce and add the basil leaves
