Roasted chicken with herbs

INGREDIENTS

-1 chicken of about 1.5 kg to 2 kg
-1 kg of potatoes well washed and cut in 4 pieces, keep the skin
-1 red bell pepper cut in strips
-4 tomatoes cut in half
-8 whole green olives
-8 mushrooms cut in half
-1 green bell pepper cut in strips
-150g butter
-15g of grated ginger
-4 sprigs of thyme, leaves removed
-4 bay leaves
-1/2 bunch of finely chopped parsley
-1/4 bunch tarragon, finely chopped
-½ sprig rosemary, thinned out and finely chopped
-1 clove of garlic, grated
-1 head of garlic (keep the whole cloves with the skin)
-1 onion, thinly sliced
-25cl of chicken stock
-Salt and pepper

INSTRUCTIONS

Step 1: Add Salt and pepper to the chicken.

Step 2: Prepare a paste with the butter, thyme, parsley, tarragon, rosemary, ginger, grated garlic clove and brush the chicken well inside and outside.

Step 3: Place the potatoes, chopped onion, garlic cloves, peppers, tomatoes, green olives, mushrooms, bay leaves in a dish and cover with the poultry stock.

Step 4: Place the chicken in the center of the dish and cook for 1 hour and a half to 2 hours in an oven preheated to 160°c, basting regularly.

The Chef’s special touch:
Add smoked bacon or chorizo with the potatoes while cooking.
