Chinese Soup

INGREDIENTS

– 5 shiitake mushrooms
– 4 black mushrooms
– 1 leek white, chopped
– 1/2 stalk of celery
– 1 seeded tomato, diced
– 1 litre of chicken soup or broth
– 20 grs. ginger, julienned
– 1 clove of garlic, minced
– 1 green lemon
– 2 tablespoons cornflour mixed with a little salt
– 1 tablespoon of fish sauce (nuoc-mam)
– 2 tablespoons soy sauce
– 1 beaten egg white
– 100g peeled and peppered shrimp
– 150g fish fillets cut into – 4 cm strips
– 200g chicken breast cut into 4cm strips
– 1 bunch of chopped coriander
– 3 onion stalks, chopped
– Salt and pepper
– Sesame oil

INSTRUCTIONS

Step 1: Soak the mushrooms in hot water for 30 minutes and cut them into strips. (Set aside).
Step 2: Heat a little sesame oil in a pan and fry the mushrooms.
Step 3: Add the chicken, ginger, garlic, leek, celery and stir.
Step 4: Add the fish sauce, soy sauce and chicken stock, simmer for 15 minutes then add the tomato and cook for another 15 minutes.
Step 5: Add the prawns.
Step 6: Coat the fish fillets in the salted cornflour, dip them in the beaten egg white then add them to the stock, leave to cook for 3 minutes then stop cooking
Step 7: Adjust the seasoning
Add the lemon juice, coriander and onion stems
