Leek and Fish Soup

INGREDIENTS

– 2 liters of chicken broth
– 400g of white fish fillets
– 2 large leeks, sliced
– 2 stalks of celery, chopped
– 1 potato, diced
– 1 onion, chopped
– 1 clove of garlic, chopped
– 30g of olive oil
– Salt and pepper

INSTRUCTIONS

Step 1:- Bring the chicken broth to a boil and reduce to a simmer;
Step 2:- Season the fish fillets with salt and pepper and poach them in the simmering broth for about 3 minutes.
Step 3:- Remove the fish from the broth and set it aside on a plate along with the broth to keep warm.
Step 4:- In another pan, soften the vegetables in the oil.
Step 5:- Add salt and pepper and pour in the hot broth and simmer for about 20 minutes.
Step 6:- In a blender, purée the soup until smooth and adjust the seasoning.
Step 7:- Pour the soup into the bowls and divide the fish into the bowls.
