Step 1: Cook the potatoes until tender in boiling salted water.
Step 2: In a saucepan, bring the cream and garlic to a boil and let it infuse for a few minutes, then remove the garlic.
Step 3: Mash the potatoes, continue to mash adding the butter and add the garlic cream and milk.
Step 4: Add the cheese and heat the mashed potato over medium to low heat. Keep stirring until the cheese is melted and the mashed potato is very elastic.
Step 5: Adjust the seasoning.
Chef’s special touch:
Use a wooden spoon for step 4 and accompany your ligot with a nice slice of leg of lamb.
