Vegetarian Mauritian Chilli

INGREDIENTS

– 2 onions, chopped
– 2 cloves of garlic, chopped
– 30g of oil
– 2 yellow peppers, diced
– 30g sauce or chilli seasoning (paprika, chilli powder…)
– 500g of diced tomatoes
– 500g cooked kidney beans
– 120g of green beans cut in pieces
– 15g of cane syrup
– 15g of liquorice

 

For the service
15g of liquid cream
10g of coriander

INSTRUCTIONS

Step 1:-  Tenderize onions and garlic in oil.
Step 2:-  Add peppers and chili powder.
Step 3:-  Cook and stir for 1 minute. Add remaining ingredients. Season with salt and pepper.
Step 4:-  Bring to a boil and simmer over medium heat for 30 minutes, stirring regularly.

Chef’s tip: add water if the chili is too thick. Before serving, drizzle with cream and sprinkle with coriander.
