It is indeed the season to be merry and there is nothing like celebrating Christmas around traditional home-cooked meals with your loved ones. This holiday, dare to re-create your customary recipes by adding elegance to it.  We have put together for you simple ideas which breathe Christmas and which will be easy to execute. The bonus is that you can have the main ingredients delivered at your doorstep within clicks.

For Starters

The Bruschetta: Fresh, Colourful & Delicious.

Perfect for both the grand gathering you are hosting or the intimate get together, the Bruschetta is a classic. Upgrade this traditional starter by highlighting the taste with some savoury truffles in balsamic vinegar . The amazing characteristic of the bruschetta is that it is easily prepared; all it takes is some chopping and dicing of the ingredients however the truffles do require some delicate slicing. The flavour of the truffles will leave your guests craving for more. Do not forget to serve with a good bottle of Bordeaux.

The Mains

There is no going wrong weather you choose to prepare a dish with fresh meat or seafood as your main course; and given that it is the holiday season, the more is always the merrier! The scent of a perfectly Pan-Seared Foie Gras with spiced citrus purée will win the hearts of your guests as much as a tender braised lamb infused in rosemary, thym and wine. Seafood dishes can be winners too. Allow your palate to be pampered with the taste of a maple orange Salmon served with refreshing mango salsa with a hint of lemon juice. The key is to not compromise on quality of the ingredients you are using.

For Starters

1. Bruschetta with Tomato & Basil

Prep Time: 15-20 MINS
Serves: 6-10 as an appetizer

Ingredients:

  • 1.5 lbs of ripe cherry tomatoes
  • 2 cloves of garlic (minced)
  • 60ml olive oil, plus some more (for coating the bread)
  • 1 tsp balsamic vinegar
  • 6 chopped basil leaves
  • Salt – to taste
  • Freshly ground peppers – to taste
  • 1 French baguette (sliced)

Method:

  1. Dice the cherry tomatoes (blanch and peel if you are using different tomatoes)
  2. Pre-heat oven to 230°C
  3. Toss tomatoes with garlic, olive oil, balsamic vinegar, salt & pepper.
  4. Brush the baguette slices with olive oil and toast them on the top rack of your oven for 5-6 minutes.
  5. Remove the toasts when turn golden.
  6. Serve the toasted bread with the tomato mixture.

2. Mushroom Bruschetta with Brie, Sage & Truffle Oil

Prep Time: 15-20 MINS
Serves: 6-10 as an appetizer

Ingredients:

Sliced Baguette

Olive oil for brushing

1lb fresh mushroom

1 tbsp of butter

1 shallot (diced)

4 garlic cloves (chopped)

10 sage leaves (thinly sliced)

2 tbsp cooking sherry or white Wine

8-12 ounces of triple  cream brie

Method:

  1. Pre-heat oven 230°C
  2. Brush both sides of sliced baguette lightly with olive oil, sprinkle a little salt on the tray and bake until golden which should require about 15 mins cooking time.
  3. Saute the mushroom in hot oil. Season with salt & pepper. Add shallots, garlic and sage to the pan and sauté for another 4 mins. Deglaze with the cooking sherry or wine. Drizzle with truffle oil and turn off the heat off.
  4. Place a pat of cream cheese on the nicely toasted bread.
  5. Top slices of bread with sautéed mushroom.
  6. For a fresh taste, serve immediatel.
  7. You could drizzle with a little reduced balsamique vinegar before serving.
