It's an easy night dinner everyone will love! ​

INGREDIENTS

2 1/4 pounds (1kg) Cherry & Exotic tomatoes

6 cloves Garlic, peeled

4 tablespoons Olive oil

1/2 cup chopped Onions

2 teaspoons Sea Salt

2 tablespoons fresh Basil

4 sprigs fresh Thyme

INSTRUCTIONS

  1. Preheat the oven to 345 degrees F.

  2. Cut tomatoes in half and place in large bowl. Add olive oil, onion powder, sea salt and fresh basil to the tomatoes. Mix and combine thoroughly.

  3. Place tomatoes into an oven safe dish. Top with garlic cloves and fresh thyme. Transfer dish to the oven and allow to roast for 20 – 35 minutes.

  4. Serve with cooked pasta of choice or over rice!
